Chocolate Chunk Cookie Recipe

 

INGREDIENTS:

  • 1/4 cup coconut flour

  • 3/4 scoop vanilla whey protein powder

  • 1 tbsp coconut sugar

  • 2 packets stevia extract

  •  1/2 tsp organic psyllium husk powder

  • 1/4 tsp baking powder

  • 1/8 tsp pink sea salt

  •  2 tbsp almond butter

  •  1/4 bottle Plain Pillars Drinkable Greek Yogurt

  •  1/2 tsp vanilla flavor/extract

  • 1-2 tsp water, as needed

  • 4 squares dark chocolate

DIRECTIONS:

  1. Mix together dry and wet ingredients separately, then mix together until a dough forms.

  2. Roughly chop chocolate chunks and fold into dough, reserving some to decorate the top of the cookies.

  3. Roll into 4 dough balls, flatten, top with extra chocolate.

  4. Bake at 350˚F for 6-7 minutes!
